Saladita!


Imagine this: a vegetarian who didn't really like to eat veggies. See also: Me, approximately a year ago. I was what I like to call a "vegaquarian" (a vegetarian who eats fish, er pescatarian). That lasted four years until I drove past an In and Out Burger. But that's another story. The real story here, folks, is that I found a veggie dish that I actually crave. Here it is:


Fresh Corn, Black Bean and Avocado Saladita
Adapted from Mollie Katzen's The Vegetable Dishes I can't Live Without

Here's what you need:

2 Ears of sweet corn
3 T fresh lime juice
3 T extra virgin olive oil
1 Can of black beans, drained and rinsed!
1 C diced cherry tomatoes, or any good fresh tomato you have
1/4 C minced red bell pepper
1 clove of garlic
3 T minced red onion
salt and fresh pepper to taste
2 medium avocados, diced

Here's what you do:

Cut the corn off the cob, throw it in the bowl. Mix everything else in the bowl except the avocado. For the best flavor, let all the goodness marinate in the fridge for an hour or so. If you can't wait, don't. It's good anyway. Add the avocado before serving. You can serve it cold or at room temp.

So delicious, it's blurry. Yum.

  1. Heh. My best friend from grad school was a (strict, ethical) veg who didn't like veggies. She lived on bread and cheese, in various forms (au naturale, mac and cheese, pizza, enchiladas, etc), and refried beans. No joke.
