Just saw this on Pinterest and I thought it was a great idea. I'm new to eating fresh fruits and veggies, and this guide, I think, is really helpful for getting started. What else is in season right now? Anyone have any good mid-winter cooking ideas?

Kristen I have made some great Butternut squash soup lately. No cream or butter involved but it tastes like it is in there!
ReplyDelete1 Butternut Squash - peeled and cubed
2-3 Carrots - diced
1 Onion - chopped
2 cloves Garlic - whole
olive oil - 2 tbsps
Heat the above in a large soup pot for 5 minutes, then add:
broth - 4 cups
Bring to a boil then let simmer for about 40 minutes or until the veggies are tender. Remove from heat and blend either with a hand blender or transfer to countertop blender. I usually add cracked pepper at the very end. Serve. Makes 4 large servings or 8 side servings.
This is the only thing I have made for Mark that he has requested I make more often, and it's one of the healthiest. You can obviously change out ingredients for other veggies too. I think I might add broccoli next time!
Forgot to mention the squash needs to be seeded (obviously) and you might want to remove some broth before you blend to make sure you get the consistency you prefer. And voila!
